Banana Chocolate Chip Pancakes

These banana chocolate chip pancakes are light, fluffy, and packed with rich chocolatey flavor. These pancakes are a great way to repurpose old bananas!

Bananas don’t last very long in Israel’s summer heat.  In April we regularly have temperatures that back in New York we considered a heat wave. 

Within days our freshly bought bananas are soft are soft and spotted and it wasn’t long before they were completely black.

This has inspired me to find different recipes to make to use them up like banana chocolate chip muffins and banana chocolate chip bread. 

Now, in honor of my brother Benji, I present banana chocolate chip pancakes.

Benji’s favorite type of pancakes are banana chocolate chip pancakes, so one day when he was home from the military, I made him a stack. 

At the time he was serving as a paratrooper in the Israeli Defense Force.

WHY USE OVERRIPE BANANAS?

There are a few benefits to using overripe bananas in baking. 

First and foremost, older bananas give a stronger flavor than fresh bananas - the darker the better.

Secondly, they are easier to mash than fresh bananas. 

Lastly, it allows you to repurpose them instead of having food wasted. 

GLUTEN FREE OPTION

Gluten Free Flour

There are gluten free all purpose flour blends you can buy that can replace all purpose flour cup for cup.

OAT FLOUR

Oat flour is made from whole oats that have been ground into a powder, which can easily be done at home.  

It gives more flavor and a chewier and crumblier texture than regular all-purpose flour.

Substitute 1 cup of all-purpose flour for 1 ⅓ cup oat flour.  To make 1 cup of oat flour, blend 1 ¼ cups of oats in a food processor until finely ground.

Note: oats must be marked gluten-free because they can get cross-contaminated in the factory.

RECIPE TIP

I have a Soda Stream which makes it really easy but bottled sparkling water works just fine.  If you don’t have sparkling water you can use regular water or orange juice for more flavor.  It just won’t be as fluffy.

Banana Chocolate Chip Pancakes

These banana pancakes are incredibly fluffy and a great way to use up old, soft, and spotted bananas.

Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1 and ½ cups all-purpose flour (190 grams)
  • 2 tablespoons white sugar
  • 2 and ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 bananas, overripe
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup water (235 milliliters)
  • 1 cup chocolate chips, dairy free (175 grams)

Instructions

  1. Whisk together flour, sugar, baking powder and salt together in a mixing bowl.
  2. Mash the bananas, and add it along with eggs, and vanilla. Mix.
  3. Add carbonated water and mix gently until incorporated.
  4. Using a ladle, pour the batter onto a greased and heated frying pan or griddle pan
  5. Sprinkle chocolate chips and let it cook on a medium flame until the edges of the pancakes stiffen. Then, flip it over and cook it on the other side.
  6. Remove the pancake, setting it aside, and repeat with the rest of the batter.
